Introducing the 2nd World Week of Italian Cuisine

The Italian Cultural Institute is pleased to announce the fourth of a series of cooking classes dedicated to Italian regional cuisine. After Tuscany, Abruzzo and Sicily the class is this time dedicated to the Campania region. The cycle represents an introduction to the 2nd World Week of Italian Cuisine, which will be held all over the world, including Sydney, between the 20th and the 26th of November 2017.

Andrea Tranchero, Executive Chef at Casa Barilla, has selected a menu typical of the Abruzzo region. During the class participants will learn how to prepare: insalata di polipo e patate, colatura di alici e ‘brodo du pulp’to’ (octopus salad with potatoes, anchovy and octopus broth) and Vesuvio di rigatoni alla partenopea (baked rigatoni with meatballs in tomato sauce, mozzarella and basil). The lesson will be followed by a degustation of the dishes that have been prepared accompanied by a glass of wine from Campania.

Campania boasts one of the oldest and richest culinary traditions in history. Tasty delicacies that have conquered the whole world, born from a land known since ancient times for its peculiar climate and the fertility of its land, to which the activity of its several volcanoes has heavily contributed. In addition, having been for several centuries at the crossroads of countless peoples and cultures of the Mediterranean (the ancient Romans called it Campania Felix), this part of the Italian peninsula became a land in many ways unique from a gastronomic point of view. Campania is world famous for being the homeland of the Mediterranean diet, pizza, tomato sauces, pasta and buffalo mozzarella, as well as many other gastronomic specialties, now known and appreciated all over the world.

andrea trancheroItalian chef Andrea Tranchero has 25 years of experience in a career that started in his homeland, the Italian Piedmont region. Today he is the Executive Chef for Barilla in Australia and the Italian Ambassador of Barilla Australia and New Zealand. Before reaching Australia, Andrea has travelled the world, working in Italy, France, USA, China and Japan cooking at top starred restaurants, such as the Grand Hotel Europa in Cervinia and the Principi di Piemonte in Sestriere, the Bice Restaurant at the Four Seasons Hotel and the Armani Restaurant in Tokyo, the Cicada in Los Angeles, L’Enoteca Restaurant in Paris. Tranchero’s cuisine has won over many celebrities, including Italian fashion icon Giorgio Armani, Richard Branson and former Italian President Giorgio Napolitano.
